What I love about quinoa is that it not only makes a great different side dish but it also can be a meal in itself.
I whipped up this little yummy for a clean lunch to have for the next few days.
You can add chicken to this for a wonderful dinner as well. Perfect time to use your frozen crockpot chicken quickly:-)
1 cup of quinoa, cooked per package
2 TBSP of coconut oil or olive oil
4 cloves of garlic
1 large onion, chopped
12 oz of mushrooms, sliced
16 oz of fresh spinach
1 TBSP of balsamic vinegar
Cook quinoa per package directions
Heat the oil in a large saute pan.
Add garlic an onions and saute for about 5 minutes.
Add the mushrooms and balsamic vinegar. Cook for about 10 minutes or until cooked down substantially.
Then add the spinach and cover. Cook until wilted stirs often.
Add the quinoa and toss to mix thoroughly.
