Roasted Potatoes Recipe - An easy favorite side dish

These Roasted Potatoes are fabulous…..and so easy! They are a weekly staple in our house and I pretty much always make them when we have company because they are just.that.good! :-)

Ingredients

2 lbs of potatoes (I use white or red potatoes)
1/4 cup of olive oil (this is an estimate because I drizzle the olive oil over them generously. This keeps them from getting dry)
Salt and pepper

Directions

Preheat oven to 400 degrees

Cut potatoes into cubes

Pour olive oil over potatoes

Sprinkle with salt and pepper

Toss the potatoes and oil together with your hands to coat them well

Bake for 45 minutes. Then turn and mix.

Bake for another 20 minutes. Turn and mix again.

Bake for another 20 minutes. Repeat if necessary.

You want them to get a nice brown in color. The crunchy outside is sooooo great!    I typically make more than 2 lbs and when you do you will need to increase your cooking time accordingly.
