Healthy Apple Almond Butter Muffins

Healthy Apple Almond Butter Muffins

One of easiest ways to make sure you eat a healthy breakfast is just a little planning and baking ahead. It is so easy to skip breakfast altogether or grab pour a bowl of sugary cereal if you don’t have a lot of time.

Please promise yourself to not skip breakfast. It is such an important meal. My husband is the one who made us think hard about it. The name “Breakfast”. You are “breaking the fast”. Your body has not had any food / nutrients for typically 8-12 hours. Breakfast gives you the nutrients and energy to start the day. Your brain functions better. Your body functions better and your metabolism will thank you tremendously!

Remember, eating small healthy meals every 2-4 hours keeps your body’s metabolism working at it’s optimal pace. If you go too long between meals, your body goes into fat storing mode. We certainly don’t want that!

These healthy Apple Almond Butter Muffins are another great breakfast and snack option for you. Combine them with a bowl of Greek yogurt or a piece of fresh fruit.


Healthy Apple Almond Butter Muffins

Serves: 12
  • ⅓ cup oat flour
  • ⅓ cup oats
  • ½ cup unsweetened apple sauce
  • ½ cup almond butter
  • 2 TBSP organic coconut sugar or brown sugar
  • 2 TBSP agave or honey
  • 1 tsp vanilla extract
  • 1 egg
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ⅛ tsp of salt
  1. Preheat the oven to 350 degrees F.
  2. Grease muffin tin with coconut oil or nonstick spray. (Do not use muffin liners)
  3. In a medium bowl, Mix together the oat flour, oats cinnamon, baking soda, baking powder, and salt
  4. In a large bowl, mix together the applesauce, almond butter, honey, vanilla extract, and coconut/or brown sugar
  5. Beat in the egg.
  6. Using a cookie scoop, scoop evenly into the muffin cavities.
  7. Bake at 350 degrees for 16-18 minutes.
